Its natural starches contain resistant starch, a carb type that promotes good gut bacteria and improves insulin sensitivity, allowing the body to access stored fat more efficiently for energy.

Studies in the Journal of Nutrition & Metabolism have shown that diets high in resistant starch can boost fat oxidation and reduce appetite. Additionally, the beta-carotene found in pumpkin is linked to better metabolic health and reduced inflammation.

Professor Joseph recommends substituting heavier, processed carbs with pumpkin and squash as a “smart carb” alternative. By swapping out half of your usual pasta, rice, or potatoes with roasted squash or pumpkin puree, you can enjoy a comforting, satisfying texture with fewer calories, more fiber, and a better nutrient profile.

He advises against loading healthy carbs with butter or cream, suggesting a simple drizzle of olive oil, herbs, and seasoning instead. Cutting out all carbs completely can be counterproductive, as the body needs carbohydrates for energy and workouts. Opting for nutrient-dense, slow-burning options like autumn vegetables can be beneficial for overall health and weight management.
